Cut the eggplant into hob cubes.

After slicing the pork, add a spoonful of cooking wine and a spoonful of light soy sauce and marinate for fifteen minutes.

Slice onions and ginger, and cut coriander into sections.

Heat oil in a pan, add star anise, peppercorns, ginger and green onions after heating, and stir-fry until fragrant.

Add the meat slices and stir-fry until they change color. Add two spoons of light soy sauce and sweet noodle sauce. Stir-fry and then add a little water.

When there is no water in the pot, stir-fry the eggplant pieces until soft, then add a small bowl of water and simmer for eight minutes.

Add salt, stir evenly, sprinkle in coriander, and turn off the heat.
