Matcha dough
Overview
The weather is hot, and spending some time at home to make simple and labor-saving dough has become my favorite. If you eat it more often, you will inevitably come up with some ideas and add a little color, such as matcha powder. It will have some heat-relieving effects when you eat it, right?

Take a small spoonful of matcha powder and put it into a bowl.

Pour in 150 grams of water and mix well.

Take another bowl and add 70 grams of high-gluten flour, 50 grams of wheat starch, and 0.5 tsp of salt. Mix well with a whisk.

Pour in the matcha water and stir.

Whisk until it flows down into smooth lines when you lift the whisk, then let it sit for 30 minutes.

Take a dry flat-bottomed stainless steel plate and apply a layer of vegetable oil on the bottom (two plates can be used alternately).

According to the size of the plate, scoop about 1/3 of the batter into the plate and wait until it spreads out automatically.

Add enough water to the pot to float the plate, and put the plate in the pot when it is about to boil.

Add the lid to the pot, wait until the batter is slightly set, turn up the heat, steam until big bubbles form, steam for a while, it takes about three to four minutes in total

Use a slotted spoon to remove the plate and place it in a prepared basin of water to cool.

After cooling, remove the dough.

Fold the oiled side in half and cut into strips.

Pour the sauce made from an appropriate amount of chopped garlic, sugar, salt, light soy sauce, sesame paste, and chili oil onto the dough and stir evenly.
