Cut the pork belly into mahjong pieces, put it in a pot with cold water, add cooking wine, bring to a boil over high heat, remove the fishy smell and foam, boil the water for 15 minutes and then take it out

Heat oil in a pan, add blanched pork belly, stir-fry over medium heat, stir-fry for 5 minutes, add ginger slices, star anise, peppercorns, rock sugar, dried chili pepper, cloves and cinnamon, continue to stir-fry until oil is released, about 10 minutes

Add onion, garlic, bay leaves, hawthorn and tangerine peel and continue to stir-fry until fragrant. Add white wine and continue to stir-fry for 3 minutes
