Prepare the ingredients, cut the tripe into small strips, put it in an electric pressure cooker in advance and add cinnamon, star anise, bay leaves and a little white wine to cook.

Cut the celery stalks into small pieces and the red pepper into large pieces.

Heat the oil in a pot over low heat, add the boiled fish seasoning and stir-fry out the red oil.

Turn to high heat, add tripe and stir-fry until fragrant.

Add the celery stalks and sour chili peppers (just blanch the celery stalks in water for one second in advance, then rinse with cold water and set aside).
