Overview

A few days ago, I posted a note about making white meat with garlic paste. A friend asked about the process and made a recipe with detailed steps. In fact, the process is very simple and versatile. For example, if you replace the meat with chicken, it becomes a white chicken.

  1. First prepare the base ingredients, mung bean sprouts, cucumbers or other ingredients you like. Blanch the bean sprouts in boiling water, dry them out and lay them flat on the bottom of the plate.

  2. Pork belly can be served with or without skin, depending on personal preference. Pour cold water into the pot and boil for about 20 minutes. Use a long bamboo skewer to prick the thickest part until there is no bleeding.

  3. Remove the cooked meat, cool it down, and cut into thin slices.

  4. Arrange it evenly on the top of the dish. What I made this time is to use dried tofu as the base.

To make seasoning, it is best to mash garlic and ginger in a garlic jar, pour a little cold boiled water and mix thoroughly, pour into a bowl, add appropriate amount of salt, sugar, light soy sauce, chili oil, pepper noodles, minced green onions, cooked sesame seeds, burn some hot oil and add the seasoning.

  6. Pour the seasoning over the meat and garnish with cilantro.
