Put chicken legs, ginger slices, green onions, star anise and bay leaves in a pot with cold water. Bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes.

Chop the garlic, ginger and green onion into small pieces, add some chili powder, put it into a bowl and pour hot oil on it

Fry out the aroma, add red oil, light soy sauce, oyster sauce, vinegar and salt and stir evenly.

Take out the cooked chicken legs and immediately soak them in cold water for about 10 minutes to cool them down

Remove the cooled chicken legs and cut them into pieces, place them on a plate, and pour the sauce over them
