Put the pork belly into a pot of cold water, add a little cooking wine and a few slices of ginger, and cook over high heat;

Bring to a boil over high heat and skim off the foam;

Turn to low heat and cook until chopsticks can be inserted easily. Take the pork belly out and let it cool;

Cool the pork belly and cut into slices;

Cut the bitter melon into diamond-shaped pieces and blanch it in boiling water with some oil and salt;

When cooked to about eight or nine minutes done, take it out and soak it in cold water to control the moisture;

Heat a pan, add a little oil, add the cooked pork belly slices and stir-fry;

Stir-fry the pork belly until the oil is released and the surface is slightly browned. Add the bean paste, onion, garlic and green and red pepper;

Continue to stir-fry until the seasonings are fragrant, add the blanched bitter melon slices and stir-fry;

Finally add a little salt and other seasonings and stir-fry evenly;
