Minced pork and laodoufu version of meatballs

Overview

About half a year ago, I discovered that dumpling fillings, wonton fillings, and meatballs taste much better without the addition of minced green onions! Especially me who am not used to eating green onions! You can try it without adding chopped green onions. This is a tender meatball with added water starch. Try it if you like

Steps

  1. One pound of pork belly, add appropriate amount of ginger. The fresh ginger I bought was less than 0.8 yuan. Mince the ginger first, then mince it evenly with the meat filling.

  2. Tofu costs 2 yuan or 3 yuan. It’s Lao Doufu. Prepare Haitian dark soy sauce, salt, black pepper, water starch (flour + water. The ratio of 1:2 is almost the same)

  5. Add water starch in 3 times. Stir in one direction for 2 minutes after each addition. Then add water starch. Stir for another 2 minutes. Add the water starch into the minced meat in 3 batches, remember. This way the minced meat will be very tender,

  6. This is the finished product after stirring until the end. It is very chewy.

  7. Roll the minced meat into the size you like, then fry or steam it (steam it when cooking to save gas). This way you won’t be too busy when frying. PS When kneading the balls, wet your palms with water so that the balls will be better formed and less sticky

  8. After the oil is completely heated, add the meatballs and fry until golden brown. When frying over high heat, remember to turn the pot back and forth after forming. Fry over medium heat, turning the pan less.

  9. If you are afraid that the meatballs will not form and stick to the pan after frying, you can fry them for a while until they are golden, then place the pan at an angle, turn off the heat, and let them dry for about 1 minute. After a while, the meatballs at the bottom of the pot will roll to the bottom with a gentle shovel. If it doesn't work, let it cool before shoveling again. There is no such problem with non-stick pans. I bought a stainless steel pot. This way the croquettes won’t lose their shape.
