Lean Pork and Watercress Porridge
Overview
There is only one piece of bacon left from the drying years ago. I like to use the lean meat to make porridge and cook it with watercress from home. It is both delicious and spicy. It is suitable for clearing the intestines and stomach and reducing internal heat after the New Year.

All ingredients. Soak the lean meat for half an hour in advance, and soak the rice for about ten minutes for better cooking.

Blanch the lean meat and chop into small pieces.

Wash the rice, put it in a casserole, add ginger slices and an appropriate amount of water and cook over medium heat (put a few drops of oil in the casserole first).

Add the watercress ten minutes before the porridge is ready.

Continue to simmer for about ten minutes and then add appropriate amount of salt to taste.
