As a Northwesterner, you must make fried noodles. I have already posted a recipe for soaking noodles in water before. This time I will share a recipe for soaking noodles in oil. In fact, both methods are very simple. You only need to do it a few times. No matter which method is used, the taste will be the same!

Mix all the dough ingredients together, knead the dough and let it rest for twenty minutes (I knead the dough with a chef's machine for 5 or 6 minutes);

After resting, continue kneading the dough for 5 or 6 minutes to form a smooth dough;

Take out the dough, roll it into a long strip, and divide it into 12 small pieces;

Take a plate and brush it with a layer of oil;

Slightly flatten each small corner;

Put it on a plate, brush the surface of the dough with a layer of oil, cover it with plastic wrap and let it rest for another hour;

While the noodles are waking up, prepare side dishes and seasonings; wash the vegetables and cut them into large pieces, wash and drain the bean sprouts and set aside. Prepare garlic, chopped green onion, chili powder, Sichuan pepper powder, light soy sauce, balsamic vinegar, salt and a little MSG for later use;

After the dough has risen and set quickly, boil a pot of water, take a small piece of dough and flatten it, and press it in the middle with chopsticks;

Grasp the two ends of the dough with both hands, and while pulling it, smash it on the chopping board into a long strip;

Tear it apart from the indentation in the middle with both hands and put it into a pot of boiling water;

Boil the noodles until they are tender and take them out;

Put it in a large bowl, then put the vegetables and bean sprouts into a pot of boiling water and blanch them and take them out;

Place it on the noodles, then add minced garlic, sichuan peppercorns, pepper powder and chili powder;

Pour vegetable oil into a small pot, heat the oil until it smokes, and pour the oil over the seasoning;

Pour on appropriate amount of soy sauce, vinegar, salt and MSG and mix well before eating.
