Carp stewed with tofu

Tofu and fish are a perfect match! The fish in this dish is delicious, the tofu is crispy on the outside and tender on the inside, and it tastes great!

Clean the fish. I used the upper half of the carp. In order to better absorb the flavor, divide the fish into two halves in the middle, and dry the water with oil-absorbing paper, or control the water. You can use the whole fish, because I have made other dishes and can’t eat one

First cut the tofu into 1cm thick slices, and then make two crisscross cuts, as shown in the picture. Then dip each piece of tofu into a layer of starch

Cut green onions into sections, shred ginger, slice garlic, cut coriander into sections, and prepare star anise, bay leaves, and peppercorns

Pour soybean oil into the pot, just enough to cover the fish head. Heat.

Heat the oil until dense bubbles appear when inserting chopsticks. At this time, you can add tofu

Be careful when adding tofu and slide it in gently from the side of the pot, otherwise the oil will splash, which I've been burned by before. During the frying process, stir the tofu from time to time to prevent it from sticking together

Fry the tofu until golden brown and set aside.

Place the fish in the oil pan where the tofu was removed and continue frying

Fry the fish on both sides until golden brown and take it out.

Put the cooking wine, bean paste, light soy sauce, vinegar, sugar, and salt into a bowl, add water, and stir evenly to form a sauce

Heat up another pot, add an appropriate amount of oil and heat over medium heat for a few seconds. Add onion, ginger, garlic, star anise, bay leaf, and peppercorns and stir-fry until fragrant.

Pour the sauce into the pot and add the fish and tofu to the pot. Add water to cover the fish and tofu. Cover the pot and bring to a simmer over high heat, then reduce to medium-low heat

When there is a little soup in the pot, take out the fish first, put the fish heads opposite each other, then add the tofu, then pour the soup on it, and finally sprinkle with coriander. It smells so delicious!
