Homemade Chicken Pot
Overview
My husband has always liked chicken stew and asked me to make it at home. After all, the food in restaurants is too high in oil, salt and calories. I tried it once, and it tasted much better this time than the first time. I also made slight changes to other people's recipes, and I think it suits my taste better. Prepare all the ingredients. I used 7 chicken wings, which is just enough for two people. You can learn from this amount. If your husband likes to eat potatoes, just put them in, and you can leave out the side dishes.

Cut the chicken into slightly larger pieces, then add half a spoon of dark soy sauce, half a spoon of chicken essence, 1 spoon of cooking wine, ginger slices and garlic cloves to marinate. It's best to add some green onions if you have them. I just don't have any at home.

Marinate the chicken for more than half an hour, cut the potatoes into thicker slices, cut the onions, and cut the peppers into sections. You can hold a mouthful of water when cutting onions, so you won't cry from the spicy food.

After cutting them all, prepare the peppercorns and Sichuan peppercorns. Then take a small bowl and add crushed dried chili peppers and white sesame seeds. We are going to make a little chili oil.

Put about two tablespoons of oil in the pot, boil it and pour it into the bowl with the chopped chili peppers. You will hear a sizzling sound and the aroma of the chili peppers will waft out.

At this time, the chicken is almost marinated. Add a tablespoon of oil to the pot, add the peppercorns, aniseed and dried red pepper.

Add the remaining ginger slices, garlic cloves, preferably some green onions and peppers.

Add the chopped onions and stir-fry together.

Add the potato slices and stir-fry again. When the potatoes feel slightly burnt, add the marinated chicken. If you don't want to put potatoes, you can just omit it and just add chicken.

If the pot is a little dry, add a little cooking wine. If it's not dry, there's no need.

When the stir-fry is a little dry, add about half a spoonful of light soy sauce.

Add another spoonful of mature vinegar, and it will feel fragrant.

Add a spoonful of sugar and stir-fry together.

Finally add the beer, almost half a can, just enough to cover 2/3 of the food in the pot. There will be no alcoholic taste when eating.

After the juice is reduced, add the chili oil prepared previously. Stir together and stir-fry evenly.
