Home stewed large yellow croaker
Overview
I haven’t had a meal at home for many days during the Chinese New Year. Today I had a treat at home and cooked 16 dishes. I was so pressed for time that I didn’t have time to take pictures, so I just took a simple photo of this fish. Take a look if you like it:

A large yellow croaker

Clean up and control the water (this fish is too big, much larger than the diameter of the steamer)

Grease the pot with ginger to prevent sticking

Add oil to the pan and fry the fish over high heat

After setting, turn over and fry. If you look carefully, there is no broken skin at all.

After frying both sides until golden brown, add sugar first

When the temperature is high, cook rice wine, rice vinegar, light soy sauce, dark soy sauce, green onion, ginger and garlic along the edge of the pot

Heat the water until the water is level with the fish, then add an appropriate amount of tomato sauce

Cover the pot, bring to a boil over high heat, and simmer over low heat

Prepare peas and wolfberry

When one-third of the soup is left, add salt, pepper, peas and wolfberry

Reduce the juice over high heat. If there is some soup left, turn off the heat.

Arrange on a plate and sprinkle with chopped green onion.
