Soak quail egg whites in water for five minutes, wash and drain

Add ginger, star anise, pepper and bay leaves to the pot and set aside

The tea I used was jasmine tea, and the tea leaves and Sichuan peppercorns were put into the seasoning box

Add appropriate amount of water to the pot and add the accessories

Put in the quail eggs, add cooking wine, light soy sauce, salt, bring to a boil over high heat, then reduce to low heat and simmer for 15 minutes, stirring gently with a slotted spoon to break the eggshells for better flavor
