Spicy mutton material (mutton plate material)
Overview
Spicy mutton is also a mutton plate fabric. It is a famous snack in northern Anhui and one of the representatives of pasta. Because it originated in Taihe County, Fuyang, and was made by beating on a chopping board (a wooden table used by local people to make noodles and cook), its name has not changed for many years. Taihe County is not big, but it is well-known for its various snacks.

Cut the mutton into 1cm square pieces

Raw mutton fat cut into pieces

Add half a bowl of water to the wok

Pour in the chopped mutton fat

Stir a few times in the middle and remove the oil residue after the mutton oil is refined

Remove the oil residue and add corn oil (the same goes for other vegetable oils)

Pour in the prepared aniseed ingredients

Ginger slices

Fry over medium-low heat for 30 minutes and then remove the aniseed

Remove the aniseed ingredients and add ginger slices

After the oil temperature drops slightly, add dry red chili pepper

Fry the peppers over medium-low heat until they turn dark red

Pour in the blanched mutton (blanch the mutton to remove the blood)

Fry for 30 minutes (flip a few times in between)

Add the fried mutton into Hu Yumei chili sauce, chili noodles, salt and chicken essence

Fry the red oil and serve it out

When eating the fried mutton ingredients, add 2 times the water to boil and then season

When making soup with fried ingredients, add boiled and peeled eggs and grilled sausages, it will be delicious
