Cut the yam into thin slices, blanch it in water and set aside;

After the pot is hot, add ginger, red pepper, and edamame, stir until fragrant, add fungus, and stir-fry over low heat. The fungus will crackle when stir-fried. Add water after stir-frying for a while to prevent splashing; in addition, the fungus will be especially crispy after being stir-fried;

Pour in the blanched yam, continue to stir-fry, add a little water and cook for three minutes;

Pour in the fried eggs and continue to fry for three minutes;
