【Beijing】Pork Ribs and Bean Braised Rolls
Overview
Since the past two years, it has become popular to eat rice that remembers bitterness and sweetness, and a series of red restaurants such as various large canteens and iron benches have sprung up around us. Many people come there to remember the bitterness and sweetness because of the atmosphere and farm food. To be more precise, everyone is looking for the feelings of that era. Some people have experienced it deeply, while others have heard about it and specifically experienced it. Looking back on the past from time to time, being content with the present, and looking forward to the future can give people affirmation and hope. A few days ago, I was nostalgic in a theme restaurant with my friends. A large plate of pork ribs, beans and rolls was brought to the table. Everyone raised their chopsticks in unison. They all said they loved this dish and never got tired of it.

Steps
-
Wash the ribs, put them into the pot, add enough water, aniseed, ginger slices, garlic cloves, and green onions and simmer over low heat for about 40 minutes (you can also use the pressure cooker ribs mode if you want to save time). If you don’t put the ribs, just ignore this step.
-
While the ribs are stewing, wash the beans and break them into small pieces.
-
Slice pork belly.
-
Kneading noodles. Don't make the noodles too hard. The water needs to be added little by little. Live well for 20 minutes.
-
After the ribs are stewed, put another pot into the pot and put oil in it. When the oil is hot, add the aniseed ginger slices and chopped green onion. Stir-fry the pork belly until it changes color.
-
Pour the stewed pork ribs and pork rib soup into the pot. Add light soy sauce and salt. Simmer over medium-low heat for 15 minutes.
-
Add the beans and simmer over medium-low heat until the soup reduces.
-
Take the dough out and roll it into a long strip.
-
Take out the dough and cut it into 1cm wide pieces
-
Then stretch and twist each small section into a small roll.
-
Stir in the beans and pork ribs. Place the small rolls on the surface of the dish and reduce the juice over medium heat. It will be cooked in about five minutes.
