Braised hairtail with bean paste

I usually cook more braised hairtail and steamed hairtail. Today I’m going to make a unique dish of braised hairtail with bean paste. The deliciousness of the sauce is very delicious when it is cut with a grid cutter on the hairtail

Cut hairtail into sections and wash

Make a few cuts on the hairtail

Change the direction and make a few more cuts to complete the grid pattern on the hairtail

Cut all the hairtail fish into meshes

Put the hairtail into a bowl, add a little salt and cooking wine and marinate for 5 minutes

The marinated hairtail is wrapped in dry starch

Heat oil in a pan, add hairtail fish in batches and fry until golden brown on both sides

Fry all the hairtail fish and set aside

Reheat the oil pan and sauté the ginger until fragrant

Stir-fry the bean paste until fragrant

Add cooking wine and water

Add the fried hairtail, add a little chicken powder and a little sugar, simmer for a while (the hairtail has been salted, no need to add salt later)

Simmer the other side of the hairtail over low heat until the hairtail is cooked

Sprinkle chopped green onion into the pot, simmer for a while, take it out of the pot and put it on a plate, pour the sauce on the hairtail
