It is said that the authentic way to make white meat with garlic paste is to choose elbow meat, but the elbow meat is not easy to cook, and the pork belly will not be greasy after it is cooked, so I decided to choose pork belly!

Cook the meat: an aniseed, a piece of cinnamon the size of your little finger, one or two bay leaves, cut two slices of ginger, a few green onions, put them in the pot with the washed pork belly, add cold water that has not covered the meat, bring to a boil over high heat, skim off the floating residue, turn to medium-low heat and cook until the meat can be pierced with chopsticks (about 20 minutes), turn off the heat and simmer for another 20 minutes. Take out the cooked pork belly and put it in a plastic bag and put it in the freezer of the refrigerator. (After the pork belly is cooked, it is easy to have hair on the pig skin. After cooking, you can use a fork to pierce it on the fire and then scrape it with a knife and rinse it with boiling water. There will be no problem at all)

  2. Cutting the meat: Freeze for about 20 minutes, then cut the meat when it is cool. Just slice it, the thinner the better. The knife must be fast to cut thinly.

Sauce: add half a head of garlic and a piece of ginger, mash it into a small bowl, add pepper powder, five-spice powder, chicken powder, bean paste, oil-splashed chili pepper, then add light soy sauce and vinegar, add minced coriander, stir well, then add two spoons of meat soup, stir well. Just dip the meat slices in the sauce and eat it.
