Prepare ingredients. Ordinary flour: 800g, yeast: 8g, aluminum-free baking powder: 4g

Pumpkin, purple sweet potato: appropriate amount, red yeast rice: 15g

Steam purple sweet potato and pumpkin. Pumpkin can be sliced and steamed to make it easier to ripen. After steaming, grind into puree and set aside.

Press the red yeast rice into powder, add water and boil, filter out the residue with gauze, leave the red yeast rice water, and set aside to warm. You can also buy ready-made red yeast rice powder and mix it directly with the noodles. I feel that the red yeast rice water I make is more reliable.

Add flour to yeast and baking powder, mix well and divide into four parts. Mix three portions of them with pumpkin puree, purple sweet potato puree, and red yeast rice water to form three colored doughs, and then mix the other portion of flour with water to form a white dough. Place the four-color dough in different containers and cover with moist drawer cloth to ferment separately.

When the dough has fermented to 1.5 to 2 times its original size, you can add the ingredients. A group of four different colors and same size pills. The size of the dosing can be whatever you want, based on personal preference. The diameter of my set is 3.5CM.

Roll each of the four colors into thin strips. Sprinkle a little thin flour, press one line at a time, and arrange it into a "well" shape as shown in the picture. The two ends of the long strip are slightly thinner, which will be more convenient for subsequent operations.

As shown in the picture, 1 presses 2, 3 presses 4, and so on, and the odd number presses the even number and weaves one circle clockwise.

Press the ends of the noodles tightly against each other to form a braided dough sheet.

Turn the braided dough piece over and place it in the palm of your hand, and gather the ends of the pressed noodles toward the bottom of the steamed bun. During the gathering process, gently poke into the center, so that the finished shape of the steamed bun will be fuller and taller.

Turn the buns over, place on the chopping board, and shape slightly to make them rounder and fuller. The shaped steamed buns are fermented for a second time for about 20 minutes.

Observe that the size of the steamed buns increases and the surface of the dough is fluffy and rises, steam it in a pot, and cook it for 20 minutes after turning on the steam. (END)
