Rock sugar, red dates, glutinous rice and lotus root

I have long wanted to make this famous Jiangnan dish, but I have never been too lazy to make it. I had time to practice today. Instead of using a pressure cooker, I cooked it in a rice cooker. It was really delicious.

Wash the glutinous rice in advance and soak it for more than 2 hours.

Soak the glutinous rice, wash the lotus roots, remove the skin, and cut off 2 cm of the lotus root

Pour the soaked glutinous rice into the small holes of the lotus root. Fill every small hole and tamp it firmly with chopsticks.

Fix the cut lotus root head with toothpicks.

Prepare brown sugar, rock sugar and red dates. The amounts of these ingredients can be adjusted to personal taste.

Put all the ingredients into a rice cooker, add lotus root segments, and add water equal to the lotus root. Cover the rice cooker and turn on the rice cooker button. After boiling, cook for 1 hour. After cooking, do not move and soak in heat for more than 4 hours.

Take out the lotus roots. If you like darker color, you can pour some lotus root boiling soup over it

Let cool and slice, don't cut too thin.

Pour some osmanthus sugar on it.
