Steps
-
Prepare the ingredients, cut onions into cubes, cut potatoes into strips, cut celery into strips, and cut sausage into cubes
-
Put the celery first. Blanch the bean sprouts and potatoes in water, remove and drain
-
Put oil in the pot, just cook more than usual. Add potatoes and fry until golden brown, remove and set aside
-
Leave oil in the pot, add ginger, bay leaves, cumin, peppercorns, star anise and stir-fry until fragrant. Add bean paste and stir-fry until red oil comes out. Add dried chili pepper and garlic
-
Pour in the shrimp (I boiled the shrimp in water, you can also choose not to cook it, it depends on you) stir-fry over high heat. Add cooking wine, sugar, white vinegar, soy sauce. Pour in the sausage, cooked celery and bean sprouts and stir-fry a few times
-
Add cucumbers and onions, stir-fry for a few times, add chicken essence and it’s ready to serve
-
Finally, put chives on top of the dish, fried potato strips with coriander and sprinkle with sesame seeds
