  1. Prepare materials

  4. Soak gelatine sheets in cold water until soft (20g)

  5. Squeeze the soaked gelatine sheets (10g) and put them into the milk (30g)

  7. Add coconut milk (35g) to passion fruit juice (30g) and beat evenly, then add milk mixed with gelatin and beat evenly

  8. Whip the light cream (70g) until it is 60% and cannot flow

  9. Add to coconut milk paste and beat evenly.

  10. Place a piece of cake at the bottom of the mousse ring

  11. Then pour some of the mousse

  12. Place a cake slice on top of the mousse and pour the mousse liquid over it. After pouring, put it in the refrigerator for about 1 hour

  13. Add another soaked gelatine sheet (10g) to the remaining (35g) passion fruit juice

  14. Add sugar (25g) and melt over water.

  15. After refrigeration, pour the passion fruit juice on top and spread it

  16. Continue to refrigerate for 3 to 4 hours before serving.
