Check the hair of the cow's hooves, wash it with warm water and cut it into pieces, cut the bell pepper into pieces, cut the sharp pepper into pieces, shred the young ginger, millet pepper, slice the old ginger, and cut the green onion into sections.

Put oil in the pot, heat the oil to 50% heat, add ginger and pepper and sauté until fragrant.

Add an appropriate amount of water (preferably boiling water, stock is better), then add an appropriate amount of light soy sauce, mature vinegar, sugar, thirteen spices, and salt. After boiling, reduce the heat to low and simmer for about 30 minutes until the flavor is infused. Season halfway.
