Sour cowpea minced meat
Overview
Sour cowpeas are pickled, so they have a certain saltiness. It is best to soak them in water for 20 minutes before frying. The sour beans must be fully stir-fried in oil to have a good taste. There is no strict ratio for this dish. If you like sour beans, you can add more sour beans. If you like meatier dishes, you can add more meat. It’s up to you.

Wash the pork and cut it into pieces, add an appropriate amount of starch and soy sauce and mix well (you can also chop it into minced meat, I like the grainy texture.) Wash and cut the cowpeas and peppers into pieces, mince the ginger and garlic.

Wash and heat the pot, add appropriate amount of oil and heat until 60% hot, add ginger, garlic and peppercorns and sauté until fragrant.

Add the minced meat and quickly spread it out.

Add the chilies and stir-fry quickly.

Add the cowpeas and stir-fry again.

After about a minute, add salt and light soy sauce to taste, stir well and serve. (The salt depends on the saltiness of the sour beans. I soaked the sour beans myself. They are not salty, so I added a little salt.)
