Overview
Pulled noodles is the most common noodle dish in Shaanxi. Pulled noodle restaurants are dotted in the streets and alleys of Shaanxi, among which there are more beef noodle restaurants. As long as the braised beef cubes are prepared in advance, it is not difficult to make. The method of soaking the noodles in water is simpler than the usual oil soaking method. Just roll the dough into a rectangular shape, soak it in water to loosen it up, then pull it into noodles and cook it with green vegetables. After taking it out of the pot, add chopped chives, chopped peppers and minced garlic, pour it with hot oil, full of garlic aroma, add beef cubes and various seasonings and mix well. Pour cold water into the baking pan, place the cut noodles into the baking pan, and soak for about ten minutes;

While the noodles are soaking, prepare minced garlic, chopped chives and green vegetable segments;

I prepared the beef cubes in advance (I have already posted the recipe earlier). This ingredient can be replaced with other ingredients you like, such as tomatoes, eggs, etc.;

Heat water in a pot over high heat, turn to low heat, and pull the noodles into the pot while stretching;

Add a little cold water to the boil halfway, continue to boil and then add an appropriate amount of cold water to bring to a boil, add water twice in a row and bring to a boil;

Finally, add the green vegetables to the pot and take them out together;

Place chopped green onions, minced garlic and chili powder in the center of the noodles;

Take another small milk pot, pour in a little vegetable oil and heat it over low heat, then pour onion, garlic and chili powder on top;

Add a little salt, soy sauce, vinegar and MSG and mix thoroughly;
