Corn Dumplings
Overview
This was my first time making dumplings with corn. The corn I bought this time was very tender, and a lot of the rice milk flowed out when peeling the corn kernels. I originally wanted to blanch the corn kernels with water, but I was afraid of losing too much nutrients, so I steamed them in a steamer first and then mixed them with the meat filling to make corn filling. Corn is known as a longevity food. It is rich in a variety of nutrients and crude fiber, which is very beneficial to human health: vitamin B6, niacin and other ingredients in corn have the properties of stimulating gastrointestinal peristalsis and accelerating fecal excretion, and can prevent and treat constipation, stomach diseases, enteritis, intestinal cancer, etc. Corn is rich in vitamin C, isomaltooligosaccharide, etc., which has longevity and beauty effects. The nutrients contained in the corn embryo tip can enhance human metabolism and adjust nervous system function. It can make the skin tender and smooth, inhibit and delay the occurrence of wrinkles.

Peel off the corn kernels with a knife. (Keep the corn stalks for use)

Place the peeled corn kernels into a plate, steam them in a steamer and let cool slightly.

Peel and wash the carrots and grate them into thin strips with a vegetable grater. Set aside.

Chop the lean meat into minced meat, add minced onion, ginger, pepper, and egg white, mix well and sizing, then marinate for a while.

Remove seeds from green pepper, wash and chop into fine pieces.

Put the steamed corn kernels, carrots, and green peppers into a small basin, add a small amount of salt, a little sugar, chicken essence, and light soy sauce and mix well.

Add the minced meat and mix well.

Add half a pot of water to the pot, add corn cobs and cook the soup.

Take some dumpling wrappers prepared in advance.

Put the meat filling into the dumpling skin and wrap it into dumplings.

Boil the corn stalk core for ten minutes, take it out, and add the wrapped dumplings until cooked.

After the dumpling water is boiled, add a little cold water to boil. Add water three times and the dumplings will be cooked. I was too busy answering the phone and the dumplings were overcooked and the finished product was not very pretty.
