Spanish paella
Overview
This is my first time learning how to make Spanish paella at home. I bought most of the ingredients online, but I still don’t have all the ingredients! I found that there must be a lot of seafood in the rice! It will be enjoyable to eat this way! The most important thing about this rice is Saffron. Saffron has a very special aroma and will dye the rice into a beautiful golden color. Although it is expensive, it is indispensable!

Chop garlic cloves, bell peppers, and onions into small pieces and set aside

Prepared squid strips, diced chicken legs, snapper fillets, prawns, mussels

Prepared chorizo, saffron

Add an appropriate amount of olive oil to the pot, add diced onions and minced garlic, and stir-fry until fragrant

Add diced bell peppers and stir-fry for a while

Add rice, I use Wuchang rice, it is best to use no-wash Spanish paella rice

Add a little saffron and paprika

Add white wine

Add the stock to cover the rice, season with salt and black pepper

Cover and simmer over low heat for 15 minutes, try not to open the lid during the process

The soup becomes dry

Add seafood, sausages and other ingredients, press lightly with a spatula a few times, cover and simmer for another 8 minutes.

Add lemon and parsley leaves for decoration. Because I didn’t buy parsley, I used our local celery leaves. When eating, mix the rice well and drizzle with lemon juice
