Winter Melon Tofu with Red Wine Sauce

Sauce dishes are always so popular. There is bright gravy on the top of the dish, which adds an extra layer of color to the dish. The gravy is used with rice and tastes great. Some people like to make the rice suffer.

Soak the mushrooms in water overnight. When cooking, remove and dice them. Keep about 1 cup of the water in which the mushrooms were soaked. Cut the bacon, red peppers, green peppers and green onion leaves into dices and set aside;

Cut the tofu into small pieces, fry on both sides until golden brown, set aside, leaving oil on the bottom of the pot;

Add 1 pinch of shredded ginger, add winter melon, stir-fry until raw, then scoop up;

Prepare a bowl of sauce. The seasonings are 1 tablespoon oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon light soy sauce, 1/3 teaspoon salt, 1/3 teaspoon sugar, 1 tablespoon sesame oil, 1 tablespoon cornstarch, 2 tablespoons red wine, 1 cup of water for soaking the mushrooms, and stir well;

Set the stove to medium heat and add bacon bits;

Stir-fry the bacon bits until oil comes out, then decant the oil;

Pour in the gravy, add red and green chili dices, mushroom dices and half of the green onions, stir a few times;

Pour in the winter melon and tofu, stir well and it's ready. Spoon the vegetables onto a plate, then pour the juice from the pot on top of the vegetables, then sprinkle the remaining half of the green onions and you're done.
