  1. Slice the pork liver, pour in a little cooking wine and salt and marinate for 5 minutes, then rinse with water several times; slice the ginger and garlic, and cut the leeks into sections for later use (green onions can be used)

  2. Heat oil in a pan, wait until the oil temperature rises, pour in the pork liver and fry it, remove it immediately after it changes color to prevent the meat from getting old

  3. Leave some base oil in the pot, add ginger, garlic and bean paste and stir-fry until fragrant. Add pork liver and leeks and stir-fry. Add sugar and a little light soy sauce and stir-fry for half a minute. If the time is too long, the meat will become stale

  4. Remove from pan and plate
