Red bean soft cake
Overview
Very soft and delicious red bean cake, the recipe comes from Junzhi, but I used a pan directly for the electric cake pan used in the original recipe. My son ate one when he smelled the aroma before it was finished. Simple and convenient, it’s great for breakfast or a casual snack. This recipe makes 6 cookies.

Mix flour, milk powder, salt and yeast evenly.

Pour in oil and water.

Mix evenly with a spatula to form a moist and sticky dough.

Pour honeyed red beans into the dough.

Continue to mix with a spatula until the honey red beans are evenly incorporated into the dough. Cover with plastic wrap and ferment at room temperature.

Let it rise until it doubles in size. Use a spatula to scrape up the dough from the bottom of the bowl until there are a lot of air holes.

Stir the dough again with a spatula to let the air out of the dough and make it smaller again.

Divide into six equal parts, roll one part into a round shape and flatten it.

Let it sit for about 15 minutes.

No need to put oil in the pan, put the cake base and cover it and heat it over medium-low heat.

Fry until both sides are golden.
