Celery fish cubes

[Fish Nuggets with Celery] Simple and homely. I haven’t bought fish for many days. I seem to be eating more pork recently. Another reason is that I have been cleaning out the refrigerator. During the Chinese New Year, the meat is piled up again! The refrigerator needs to be digested! Today's fish fillet was newly bought, so I bought one piece, with the bones removed, and it was very good with celery.

Soak the fish in salt water first and change the ingredients.

Peel the washed fish, remove the bones, and cut into pieces. I used a flat knife to cut it.

Add cooking wine, light soy sauce, salt, pepper and ginger powder to the fish and mix well. Add wet starch and mix well.

Take a large plate, put dry starch on it, and stick the marinated fish pieces with dry starch.

After gluing, place it on a plate and try not to pile it up.

Cut the celery into sections. It should be placed in the front as shown in the picture, but it is not placed properly.

Heat the oil pan. When the oil is 60% hot, add the fish pieces one by one to avoid sticking.

Fry the fish pieces until crispy and fragrant, remove from the pan and drain off excess oil.

In another pot, blanch the celery.

Use the remaining oil in the wok to sauté some onions, ginger and garlic until fragrant.

Pour in the blanched celery.

After frying for a while, add the fish pieces, stir-fry quickly over high heat, and sprinkle with light soy sauce, salt and sugar.
