Finely chop beef tenderloin.

Add cooking wine, light soy sauce, oyster sauce, and water starch, mix well and set aside for 10 minutes.

Cut the top of the tomatoes with a cross-cut knife and blanch them in boiling water for 1 minute.

Peel and chop finely.

Dice the onion.

Heat oil in a pan, add minced beef and stir-fry until it changes colour.

Add minced ginger and onion and saute until fragrant.

Add the tomatoes and stir-fry until the sauce is released.

Add a spoonful of tomato paste.

Add a spoonful of bean paste, add water and cook for 20 minutes.

Season with salt as needed.

It's sour and salty, and goes well with rice or noodles.
