Walnut rice flour muffin
Overview
As babies get older, they eat more and more types of complementary foods, and rice noodles are no longer a favorite. I still have several cans of baby rice cereal in stock, and I have to find a way to use them up. Add low-gluten flour to make a muffin cake, and also add walnuts and dried longan. It is very simple to make and tastes great. My baby likes it very much.

Prepare walnuts and dried longan

Walnut shelling

Bake the peeled walnuts in the oven at 150 degrees for ten minutes

Dried longan, shelled and cored

Chopped longan meat

Put brown sugar in a bowl

Chop the roasted walnuts and set aside

50g cake flour, 50g baby rice flour

Add 2g aluminum-free baking powder

Mix the three powders evenly

Pour the mixed powder into the bowl

Use a spatula to mix well until there is no dry powder

Pour in longan meat and dried walnuts

Stir and mix well

Put it into a silicone cake mold, eighty percent full
