The leader and I really liked the dumplings, but we couldn't find the dumpling wrappers, so we had to avoid the difficulty and roll the wrappers ourselves. As for the stuffing, the leader also likes to eat meat, but we can't eat all meat, so we added a certain proportion of Chinese cabbage, and the remaining dough was made into cat ears. Put the minced meat in a large bowl, chop the Chinese cabbage, put it in another bowl, add 2 tablespoons of salt, grab it with your hands until the water comes out, let it stand for 10 minutes, wait for the salt to kill the water, pour out the water at the bottom of the bowl, grab it again, then filter the water and drain it all. Grind the vegetables into a large mesh sieve, rinse with cold water, drain, put into a bowl with minced meat, add 1 tablespoon of minced ginger, 2 tablespoons of light soy sauce, appropriate amount of salt, 1 teaspoon of sugar, 2 tablespoons of cooking wine, 1 tablespoon of pepper and 1 tablespoon of cornstarch;

  3. Use a large pot, put 2 cups of flour and 1 cup of water, and knead the dough with your hands. If it is too dry and hard, add a small amount of water. In short, knead the dough until it is smooth, then roll it into long, even strips, and then cut into pieces;

  6. Fold the opposite side of the right hand towards the fixed point in the middle, then turn around and fold the fold towards the middle. I think this wrapping method looks better. This wrapping method can also be used for frying;

Place the wrapped dumplings on a plate sprinkled with dry flour, then boil water in a pot, put some oil in the pot (so that the dumplings will not stick to each other easily), add the dumplings, turn to medium-high heat, wait until the dumplings float, add some cold water and cook until the dumplings float.
