Pork belly and braised cowpeas
Overview
I have cowpeas at home, and I was wondering how to pair them with pork belly. I opened the refrigerator and happened to see pork belly, so I decided to pair it with it. I wanted to make a sauce-flavored dish that would be delicious with rice.

First boil the water, add 1 tablespoon of vegetable oil and 1 teaspoon of refined salt, pour in the cut cowpeas, bring to a boil and then remove the water. Cut the ginger, garlic and shallots into mince, and cut the pepper into rings;

Cut the pork belly into long cubes, put the pot over medium heat, and stir-fry until the meat is caramel and fragrant;

Pour oil to one side of the pot, turn on medium-high heat, pour in minced ginger, minced garlic, minced shallots and chili rings, saute until fragrant;

Mix with meat and stir-fry evenly;

Pour in enough water to cover the pork belly noodles;

Add 2 tablespoons of oyster sauce, 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1/2 teaspoon of pepper, 1 tablespoon of white wine, 1 tablespoon of brown sugar powder, and 1/3 teaspoon of refined salt, stir well, bring to a boil over high heat, then reduce to medium to low heat and simmer for about 10 minutes, then reduce the juice until about 1/3 of the juice remains;

Pour in the cowpeas, starch water mixed with 2 tablespoons of water and 2/3 tablespoons of cornstarch;

Pour the starch water evenly, cook until foaming, then turn off the heat and complete. Enjoy!
