Overview

Bandit duck is a famous specialty in western Hunan. Every time I have guests at home, I will make it. The guests love it. Tonight, Mu Mu’s colleagues came to our house as guests and asked for bandit duck!

  1. Place the prepared duck pieces in a pot under cold water and cook over high heat until the blood boils!

  2. While cooking, prepare the condiments.

  3. Pour the cooked duck pieces into cold water, clean them and set aside. Peel the carrots and cut them into hob pieces. Set aside.

  4. Heat up the pan with cold oil, stir-fry the bean paste over low heat, then add all the ingredients and stir-fry over low heat until fragrant!

  5. Add the sliced carrots and stir-fry for a few minutes.

  6. Add the washed duck pieces and stir-fry for a few minutes.

  7. Add the duck pieces to the pressure cooker (it will be more delicious if stewed in a casserole, but it will take longer). Pour the whole bottle of beer into the pressure cooker. After pressing for fifteen times, pour it into the wok over high heat to collect the juice.
