Soak a few slices of ginger and green onions in water to make two green onions. Pork (fat, three, thin and seven) is minced or chopped into a filling. Add a small amount of ginger and green onion water, salt, chicken essence and a little cooking wine and stir well

Add the flour to the water little by little, and knead it into a uniform dough (not too hard or too soft). Roll it into long strips, cut it into small pieces, and roll out the wrappers thinly. If you find it troublesome, you can just buy dumpling wrappers

Take an appropriate amount of meat filling and put it into the dumpling skin

Leave both sides of the dumpling empty and pinch the middle part together

Knead everything and put it into a plate (there is no water in the plate, you can add some flour to prevent sticking)

Heat a flat-bottomed non-stick pan, pour in appropriate amount of oil, put in the dumplings, and cook for a while

Pour in enough water to cover about two-thirds of the dumplings, cover the pot and cook

Cook until the water dries up and the bottom of the dumpling becomes crispy (be careful not to burn the bottom at the end)

Carefully hold the bottom of the dumplings with a spatula to scoop out the dumplings, place on a plate and sprinkle with chopped green onion.

The dipping sauce is particularly delicious (a mixture of vinegar, light soy sauce and sesame oil)
