Overview
I bought a KitchenAid, which is the best for kneading noodles. It is powerful enough and can be kneaded no matter how thin or stringy you want it to be. I couldn’t wait to try the machine. I originally wanted to make Hawaiian-style pineapple juice bread, but I only found three-in-one juices of pineapple, orange and apple. I thought it was good, as they are all my favorite fruits, so I made tangzhong fruit shredded bread. When baking noodles, in a so-called warm environment, some friends are equipped with a dough making machine, but many friends do not. Especially in winter, we can use the oven, turn on the Bake switch, turn it on for about 20 seconds, and turn it off. It just feels a little warm to the hand. If you really don’t have a hand, use a thermometer, 95~104°F (35~40°C), do not exceed 104°F (40°C), it is too hot. You can use the hot air fan to reduce the temperature. If it exceeds the standard, it will kill the yeast. Another trick is to use the microwave to heat 1 to 2 cups of water and turn it off. In this case, there will be heat emitted by the hot water, and put the dough in it to proof. Try not to open the door during the proofing period to maintain the temperature. Let me reiterate, both the oven and the microwave oven must be turned off before putting the dough in. Don't get me wrong. The author is not a professional and cannot be 100% perfect. Put the soup ingredients into a small pot, stir evenly, turn on medium heat, stir constantly, and cook until it becomes a paste.

Put 2 tablespoons of white sugar, 1/6 teaspoon of refined salt, 1 tablespoon of condensed milk, 3 tablespoons of whole egg liquid, 1+1/2 teaspoons of lemon juice, 5 tablespoons of three-in-one juice, 1 teaspoon of dry yeast, 2+1/4 cups of high-gluten flour, and 1/4 cup of low-gluten flour in the bowl of the dough mixer. Turn the machine on at low speed to form a dough, add soup stock, and knead the soup stock into the dough.

Add 4 cubes of unsalted butter (one cube equals 1 tablespoon) and stir for about 20 minutes.

Then grab a small piece of dough and stretch it into a thin film. If it doesn't form a thin film, knead it for a few more minutes until it can be torn into a thin film, but don't knead it too much.

After the dough is mixed, place it in a large bowl coated with vegetable oil or butter, cover it with film, and leave it in a warm environment for 60 to 80 minutes.

After the time is up, it will basically be doubled in size. Place it on the chopping board and rub it a few times like washing clothes to remove large bubbles. Shape it into a round shape, cover it with film paper, and let it sit for 20 minutes.

Divide the dough into three equal parts, roll into balls, cover with film and let rest for 10 minutes.

Roll it into a long strip. The width of the dough is slightly smaller than the width of the spinning box and about 0.5 cm thick.

Roll it up, not too tight, but not too loose either. Once rolled, pinch the ends tightly.

Place in a box greased with butter or vegetable oil, seal side down.

Cover and place in a warm oven to rise for about 60 to 80 minutes, then brush the surface with egg wash.

Let the dough rise. If there are enough ingredients, it should rise to 80~90% of the box. This time I didn't have enough ingredients, so I didn't let the dough rise to 80~90%. Fang Zi himself has changed it. Preheat the oven and set it to 385°F.

When the time is up, put it in the oven and set it for 40 to 45 minutes. When the time is up, open the lid, as shown in the picture.
