Fish balls in clear soup
Overview
It is very comfortable to eat a bowl of light and delicious fish ball soup on a cold day. In fact, this is the first time I have made this dish. Although the process is troublesome, the result is very gratifying. It is really beautiful to see the white fish balls in the bowl. The key is that my son likes it very much. He ate 6 of them and finished the soup. As a mother, it is really satisfying. This dish is light and nutritious. Just add some water, egg white and salt to the fish. Blanch the rapeseed and soaked mushrooms. Add a little oil and salt when blanching to make them look very green. In addition, blanch red pepper slices and put them together in the fish balls to make them look colorful. It is very eye-catching and very suitable for picky eaters!

Prepare the required materials (my husband bought the fish and forgot to tell him that it was for making fish balls. He asked the seller to cut it into pieces. Fortunately, it was not too small)

Put the fish paste in a large bowl, add ginger and scallion water and use a whisk to stir in one direction to make the bones

Add salt/pepper and egg white and continue stirring until the fish paste is completely absorbed and becomes sticky, then place it in the refrigerator for 20 minutes

Put an appropriate amount of water into the pot, hold the fish paste with one hand and squeeze it out with the tiger's mouth, use a spoon with the other hand to scoop out the fish paste and put it into the pot

Then slowly cook the fish balls over high heat (first blanch the fish balls over low heat and then cook over medium heat)
