Overview
Babao hot sauce is a traditional delicacy in Shanghai and one of the most popular home-cooked dishes. It is bright in color, fragrant, slightly spicy, slightly salty and appetizing. It’s a good choice to make some or serve with some porridge, or cook a bowl of noodles and stir-fry some spicy sauce as a topping, or make some pancakes and wrap them up! ! Prepare the ingredients.

Cut the pork into small cubes, add cooking wine, salt and starch and marinate for 20 minutes.

Fry the peanuts in the oil pan over low heat and take them out.

Dried fragrant mushrooms, diced mushrooms, peeled and diced potatoes.

Peel and dice the winter bamboo shoots, add some salt to the boiling water pot, add the diced bamboo shoots to blanch the water, take them out and drain them again.

Add ground ginger to the oil for frying peanuts and stir-fry until fragrant.

Add diced meat and stir-fry.

Add dark soy sauce, light soy sauce, hoisin sauce, and chili sauce.

Stir-fry for a few seconds, then add diced potatoes and bamboo shoots.

Stir-fry for about 1 minute and add diced dried fragrant seeds and diced shiitake mushrooms.

Stir-fry for tens of seconds, add a little water (about 50ml), sugar, and cook on high heat for two or three minutes.
