Put the duck in cold water into the pot, add 1 spoon of cooking wine, blanch 2 slices of ginger until the water bleeds, drain and set aside.

Add onion, ginger, garlic, star anise, bay leaves, cinnamon, dried red pepper, pour in 1 tablespoon of cooking wine, light soy sauce, oyster sauce and Sichuan peppercorns, stir-fry evenly.
