Add ginger slices and cooking wine to the beef and blanch it in water;

Add rock sugar, white pepper, dark soy sauce, green onion slices, ginger slices, dried chili slices, Sichuan peppercorns, bay leaves, star anise, grass fruit, cinnamon and three nai to the soup stock and cook into brine;

Add the blanched beef to the brine and cook for 3 hours;

Slice the marinated beef and sprinkle with chili powder and white sesame seeds.
