Rum Grape Soufflé
Overview
Rum is made from sugar juice pressed from sugar cane through fermentation and distillation. It is also called rum, rum or rum. Originating in Cuba, it tastes sweet and fragrant. The dried fruits soaked in it contain a slight wine flavor. After roasting, the wine flavor evaporates, and tastes winey but not strong, perfectly combining with sweetness.

After the butter is softened, add fine sugar and milk powder, and beat with an electric egg beater until the volume is puffy and the color is slightly lighter.

Add 3 egg yolks one after another, stir well with a whisk after each addition and then add the next one.

The whipped butter is thick and puffy.

Sift the low-gluten flour into the whipped butter and mix evenly with your hands.

Pour in the wine-soaked raisins, stir evenly, add a little rum used to soak the raisins into the dough, and knead into a dough.

Place the dough on a chopping board and flatten it into a 1cm thick sheet with a rolling pin.

Cut off the irregular parts of the dough and shape it into a neat rectangle. Cut into small rectangles about 4cm x 3cm in size.

Place the small rectangle on a baking sheet and brush the surface with egg yolk (add a little raisin-soaked rum to the egg yolk). Place in the preheated oven, heat up and down, 180°C, for 20 minutes, take out the baking pan and brush with egg yolk again, turn the baking pan, turn to 130°C, bake for 10 minutes, until the surface is golden brown.
