Scrape and wash the taro skin.

Cut into hob pieces.

The black-bone chicken is freshly killed in the market. You only need to use half of it and chop the black-bone chicken into pieces.

Prepare ginger, garlic, Pixian watercress, homemade chili sauce, and spices.

Add vegetable oil and lard to a hot pan. Heat the oil, turn down the heat, add peppercorns and the seasonings in the bowl, green onions, and stir-fry until red oil comes out.

Add the chicken pieces and stir-fry until fragrant, then add a little sugar, pepper and white wine and stir-fry evenly.

Add hot water and bring to a boil.

After boiling for five minutes, add the taro.

Turn down the heat and simmer for about half an hour. Pour into the casserole, add oyster sauce, chicken essence and MSG and bring to a boil again. Finally, sprinkle with chives.
