[Yangta Tsacha] We also make Northern Shaanxi rice. Potato is another name for potato. Yam Tsacha is a farmer's rice in northern Shaanxi. It is also very simple to make. Use a grater to grate the potatoes into shreds, mix them with flour and steam them in a pot. Served with chili oil and garlic paste, it can be eaten as a staple food. It is very convenient and delicious. I have made it before, and I called it steamed potatoes. This time I changed the name and made Northern Shaanxi rice.

Peel the potatoes.

Prepare half and half cornmeal and starch.

Grate the potatoes into shreds. This grater is a little thick, but a finer grater is better. I plan to cut it by hand next time I make it.

Soak the shredded potatoes in clean water and rinse to remove excess starch.

Drain the water from the washed shredded potatoes, place on a large plate, and toss with cooking oil.

Put it in the basket and steam it for six minutes after the water boils. I like to steam it directly on the basket grid so that it comes out looser.

The steamed shredded potatoes are taken out of the pot immediately and poured onto the chopping board to disperse the moisture.

Use a stone mortar to mash the salted garlic. Garlic is especially easy to puree after adding salt.
