Stuffed squid with meat filling
Overview
A few days ago, I saw a sister in Meitian making glutinous rice stuffed squid. I told my child to make that for him, but he wanted to eat meat stuffing, so I made this meat stuffed squid. Since it was the first time I made it, there is still room for improvement. An appropriate amount of starch should be added to the meat stuffing, just like making meatballs. It should feel tighter and not loose, and the taste will be better. But let me say that I still prefer boiling or stir-frying.

Clean the squid, remove the dirt, and tear off the skin. Clean the mushrooms and carrots (I forgot to pat the carrots)

Marinate the meat filling with light soy sauce, dark soy sauce, cooking wine, ginger, and sugar for a while.

Chop mushrooms and carrots (carrots are not photographed).

Add mushrooms and carrots to the meat filling, add salt, egg white and a small amount of vegetable oil and stir evenly, then beat in one direction until the meat filling is firm and not easy to loosen.

Stuff the meat filling into the squid belly and seal it with a toothpick.

Put the squid into the pot, steam for 15 minutes after the water boils.

Add light soy sauce, a small amount of oyster sauce, and cooking wine to the pot and cook until boiling.

Sprinkle some sesame seeds on the squid and pour the sauce on top.
