Saliva Chicken
Overview
Ingredients: 4 chicken legs, 1/4 cup of peanuts, 1 tablespoon of cooking wine, 1 section of green onion, 2 pieces of ginger. Seasoning: 1/2 cup of oil, 1 small handful of Sichuan peppercorns, 10 dried chili peppers, 2 star anise, 1 piece of cinnamon, 2 bay leaves, 1 section of green scallions, 2 cloves of garlic, 1 small handful of chili noodles, 1 small handful of white sesame seeds, 1 tablespoon of sesame oil, 1 tablespoon of light soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of balsamic vinegar

Steps

Wash the chicken legs and put them in the pot.

Pour water into the pot to cover the chicken legs, add cooking wine (1 tablespoon), and bring to a boil over high heat.

Rinse the chicken legs with cold water, add green onion and white ginger slices, bring to a boil, cover and cook for 10 minutes, turn off the heat and simmer for 10 minutes.

Preheat the oven to 100 degrees, add peanuts, and bake for 10 minutes.

Heat oil in a pot and add peppercorns, star anise, dried chili peppers, cinnamon and bay leaves.

Saute the spices until fragrant and filter out the oil.

Add the remaining seasoning and peanuts to the oil and mix well.

Take out the chicken and cut it into pieces, then pour the seasoning on it.
