Private Spicy Pork Trotters
Overview
My husband and mother-in-law both like to eat pig's trotters, but I always feel that pig's trotters are too greasy and I don't like eating them very much. Since my family loves to eat it, I also try to cook it in different ways. This method is still my favorite. Simple, flavorful, and delicious. Every time I made it, it was almost wiped away, and I sucked my fingers and had endless aftertaste, so I slowly began to accept it.

Cut the pig's trotters into sections and put them into the pot, add ginger and green onions, bring to a boil and cook for five minutes.

Remove the pig's trotters from the blanching pot and wash them with warm water.

Prepare ingredients: onion, ginger, garlic, star anise, cinnamon and bay leaves, grass fruit, and chili pepper.

Put a little oil in the pot and sauté all the ingredients in step 3 until fragrant.

Add a spoonful of bean paste and stir-fry over low heat until fragrant.

Add the blanched pig trotters and stir-fry evenly.

Add appropriate amount of white wine.

Add boiling water that has covered the pig's trotters and add an appropriate amount of white vinegar.

Add an appropriate amount of dark soy sauce to adjust the color.

Put a little sugar.

Add appropriate amount of salt. (I shook my hand and added a little too much salt. It doesn’t matter. We still have to fix it. Let’s cut a potato quickly)

First bring the pot to a boil over high heat, then turn to medium-low heat and simmer for about 40 minutes. When there are about 20 minutes left, add the potato cubes. (Cut the potatoes into hob pieces, use clean water to remove the starch on the surface, and then put them in a pot to cook)

Finally add light soy sauce to taste.
