Overview
As a Northeastern person, the leek box is a Northeastern specialty that I must know how to make. Very delicious, thin skin and big crunch. I remember this was the best food when I was a kid. You can only eat it on a good day.

After picking the leeks, wash and drain. Chop finely.

Put it in a basin, add salad oil first, wrap the leeks and stir. Wrapping it in oil in this way can prevent the water from leeks from escaping. Set aside.

Crack 4 eggs into another container and sprinkle.

Put oil in a wok, heat it up, pour in the beaten eggs, and fry them into small pieces. They must be older to taste better, not tender eggs. Remove the fried eggs and place them on a chopping board to cool, then chop them into pieces. Set aside.

Heat hot water in a pot. When the water boils, put the vermicelli into the boiling water. Continue to cook until cooked, then turn off the heat.

Pour in cold water, drain, then place on a chopping board and mince. Set aside.

Add salt, oil, sesame oil, chicken essence, and minced ginger in order. If you feel that the salad oil is not enough, you can add more. Amount of oil: 2 times that for cooking. Sesame oil: 2 times for cooking. Salt: Amount for cooking. Fuel consumption: Amount of cooking food. Ginger powder: 2 times the amount for cooking. Chicken essence: Amount for cooking.

When kneading the dough, it must be soft. I don’t know how much water to add to the 300g noodles. I need to add less water at first. If the dough feels hard, you can add it. Add water little by little.

Knead the dough into a long strip, as thick as a rolling pin. Then use a knife to cut it into 3 dumplings. Then use a rolling pin to roll it into a thin round cake. Use a spoon to place the trap on one side of the round cake. You can add more traps. Then fold the round cake on the other side and press it with your fingers to stick it. Do it one by one. A frying pan, wok, or electric baking pan can be used. I used a frying pan. Turn on the heat first, put less oil in the pot, heat the oil to 60% and adjust to low heat, keep the heat low the whole time. Put the cake in the pan and fry it, then roll out the cake, and do the next one, baking the cake and rolling the cake at the same time.

Fry one side for 5 minutes, then switch to the other side. The ingredients inside are basically already cooked, and they cook relatively quickly. Once everything is baked, you can eat it. You can drink some cold porridge in summer. You can also drink soup (it’s too hot)
